Chocolate Chip Cookie Dough Sandwiches

Two soft chocolate chip cookies sandwiched together with egg-free cookie dough frosting. The cookie dough (for the baked cookies) must chill for at least 1 hour before baking.
Ingredients
Cookies
- 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
- 3/4 cup (150g) packed light or dark brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
- 2 cups (250g) all-purpose flour (spooned & leveled)
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (180g) mini chocolate chips
Cookie Dough Frosting
- 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
- 3/4 cup (150g) packed light brown sugar
- 1 teaspoon pure vanilla extract
- 1 cup + 2 Tablespoons (140g) heat-treated all-purpose flour* (spooned & leveled)
- 1/2 teaspoon salt
- 1/4 cup (60ml) milk
- 1 cup (180g) mini chocolate chips
